    Preheat the fan oven to 190 °C. A properly heated oven ensures crispy baby potatoes and evenly cooked stuffed chicken rolls.

    Wash the baby potatoes and halve the larger ones. Cook them in salted water for 6 to 9 minutes until slightly tender. Drain well, allow them to steam dry and mix with olive oil. Spread the potatoes over a baking tray and roast for 30 to 35 minutes until golden brown and crispy.

    Fry the finely chopped shallot and garlic in a little oil or butter. Add the fresh spinach and cook until wilted. Squeeze the spinach well to remove excess moisture so the chicken rolls stay firm. Mix with mustard, pepper and salt for a creamy and flavourful filling.

    Slice the chicken fillets lengthwise and open them into flat pieces. Season the inside and outside with salt and pepper. Spread the spinach filling over the chicken and place thin strips of Henri Willig Organic Jersey Cow's Cheese in the centre. Roll the chicken tightly and secure with cocktail sticks or kitchen twine.

    Cook the chicken rolls in a hot pan with a little oil or butter for 2 to 3 minutes per side. This gives the chicken rolls a beautiful golden brown colour and extra flavour before they go into the oven.

    Place the browned chicken rolls in an oven dish once the baby potatoes have been roasting for about 10 to 15 minutes. Bake everything together for another 18 to 20 minutes until the chicken is fully cooked and the Jersey cheese has melted beautifully.

    Allow the chicken rolls to rest briefly before slicing. Serve with the crispy baby potatoes, extra sautéed spinach or a fresh salad for a complete and flavourful oven-baked dinner.
