Henri Willig Black Sheep has been naturally aged for more than a year, giving it a slightly tangy sheep's cheese flavor. It is a somewhat harder cheese that surprises with its soft, full-bodied texture. Combined with an apricot chutney, this perennial cheese comes into its own.
This cheese is rightfully “the black sheep” in the aged cheese range of Henri Willig, because it prefers to go out into the world in a red coat instead of the two other cheeses in their black coats. In 2018 it even traveled to the UK and won a golden medal for Best Sheep Cheese! It left all the prestigious Manchego cheeses in tears behind.
