This recipe for mini croissants is ideal for Easter breakfast, Easter brunch or as a savoury snack during a festive Easter lunch. The combination of goat's cheese, honey and thyme make these Easter croissants a little different from standard puff pastry snacks.
Serve the croissants warm from the oven and finish them with a little extra honey, chopped walnut and fresh thyme, if desired.

Preheat the oven to 180°C (356°F) and line a baking tray with parchment paper.
Grate the Henri Willig Young Goat Cheese (with Honey Thyme) finely and set aside.
Roll out the puff pastry and cut a large circle, for example using a tart pan. Then cut the circle into 16 equal wedges.
Place a small amount of cheese on the wide end of each wedge and roll the wedges from the outside in to form mini croissants.
Place the croissants on the baking tray, brush the tops with egg yolk, and sprinkle with a little extra cheese.
Bake the mini croissants in the oven for 25 to 30 minutes until golden brown and cooked through.
Serve the croissants warm and, if desired, finish with a drizzle of honey, finely chopped walnuts, and fresh thyme.
