These pulled chicken hot dogs with Henri Willig Red Chilli Cheese are deliciously spicy, generously filled and easy to make. The tender pulled chicken is mixed with spicy mayonnaise and combined with a generous amount of grated chilli cheese. Pop them under the grill for a moment and the cheese melts into a golden-brown crust. Perfect as a hearty lunch, an easy evening meal or to enjoy together.

Sprinkle the chicken with the paprika, cayenne pepper and salt. Heat a dash of olive oil and a knob of butter in a pan over a medium heat and brown the chicken on all sides.
Prepare the chicken stock cube according to the instructions on the packet. Pour the prepared chicken stock into the pan and put the lid on. Leave the chicken to simmer gently over a low heat for about 30 minutes.
Next, remove the chicken from the pan and shred it completely using two forks. Mix the shredded chicken with the Sriracha mayonnaise.
Cut the rolls open from the top (rather than the side) to create a ‘bowl’. Spread a layer of grated Red Chilli Cheese at the bottom, spoon the chicken on top and finish with another generous layer of grated cheese.
Place the filled rolls in an oven preheated to 200 °C (preferably on the grill setting) for 5 to 8 minutes. They’re ready as soon as the cheese has melted completely and has a lovely golden-brown crust. Enjoy your meal!
A cheese that melts well and has plenty of flavour goes best with pulled chicken. In this recipe, we use Henri Willig Organic Koekaas Chili. This cheese gives the sandwich a creamy, slightly spicy flavour and melts beautifully over the warm chicken. Would you like to make the sandwich a bit milder? Then you could also opt for red pesto cheese or another herby Henri Willig cheese.
Let the chicken cook gently in chicken stock over a low heat. This keeps the meat juicy and makes it easy to pull apart with two forks afterwards. Mix the pulled chicken with the spicy mayonnaise whilst it’s still warm. This ensures the sauce is evenly distributed through the meat and keeps the chicken nice and moist.
Yes, you can easily prepare the pulled chicken in advance. Store the cooked, shredded chicken, covered, in the fridge and reheat it thoroughly before serving. Then mix with the spicy mayonnaise and fill the hot dog buns with the chicken and grated cheese. Only place the buns under the grill just before serving, so that the bread stays nice and the cheese is freshly melted.
