    Add the yeast and sugar to the lukewarm milk and stir well. Let it sit for 5–10 minutes to activate the yeast.

    Add all the dough ingredients (except the cheese and mustard) to a bowl. Mix with a dough whisk until it forms a cohesive dough (you can also use a mixer with dough hooks). Then use your hands to shape it into a ball in the bowl.

    Cover the bowl with a tea towel and let the dough rest for 15 minutes.

    Lift one side of the dough and fold it over itself. Turn the bowl a quarter turn each time and repeat until you’ve done this 4 times. Let the dough rest for another 15 minutes.

    Repeat the stretch & fold process a total of 4 times, letting the dough rest for 15 minutes between each round.

    During the final stretch & fold, add the cheese (cut into small cubes) and mustard. Knead until it forms a cohesive dough. Cover and let it rest for 90 minutes.

    Lightly flour your work surface and place the dough on it. Shape it into a tight, round ball.

    Preheat the oven to 240°C and place a cast iron pan inside to heat up as well.

    Carefully remove the hot pan from the oven. Place the dough on baking paper and gently lower it into the pan. Slightly lift the baking paper and add a splash of cold water (be careful, it will create steam). Quickly put the lid on and return the pan to the oven.

    Bake the bread for 30 minutes at 240°C with the lid on.

    Remove the lid and bake for another 10 minutes until the bread develops a golden color and crispy crust.

    Allow the bread to cool completely before slicing.
