    Preheat the oven to 190 degrees. Finely chop the onion and dice the bell peppers. Crush the garlic and cut the chicken thighs into small pieces.

    Cook the onion and bell peppers in a pan for 8 minutes until soft. Add the garlic and cook for another 1–2 minutes. Transfer this mixture to a bowl together with the cottage cheese and blend until smooth. Season with salt and pepper.

    Cook the chicken pieces in a pan over medium heat until lightly browned. Add half of the sauce, the refried beans and the chicken stock. Let it simmer gently for 8–10 minutes. Is the sauce still too thin? Let it reduce a bit longer.

    Divide the chicken mixture over the tortillas. Roll them up and place them side by side in a baking dish.

    Pour the remaining sauce over the enchiladas and sprinkle with grated Jalapeño cow’s cheese from Henri Willig.

    Bake the enchiladas for 10–15 minutes until the cheese has melted and the sauce is lightly bubbling and golden.

    Serve the enchiladas with sliced avocado, a squeeze of lime juice, pickled red onion, chili oil and fresh coriander.

How do you make pickled red onion?

Pickled red onion is a fresh and slightly tangy topping that pairs perfectly with enchiladas. Slice a red onion into thin rings and place them in a bowl. Heat a mixture of vinegar, water and a little sugar and salt until the sugar has dissolved. Pour this over the onion and let it sit for at least 15 minutes. The longer you let it soak, the softer and more flavourful the onion becomes. Ideal for adding a fresh, lightly tangy balance to your dish.
