    Cut the chorizo into smaller pieces. Heat 2 tablespoons of oil in a pan and fry the chorizo until crispy. Remove from the pan and set aside.

    Do not clean the pan. Add a small knob of butter and briefly fry the finely chopped garlic together with the sun-dried tomatoes.

    Add the fresh spinach to the pan and keep stirring until the spinach has wilted.

    Add the cooked risotto together with the chorizo to the pan and mix everything well.

    Add the grated Henri Willig Organic Jersey cheese and stir until the cheese has fully melted. Season with salt and pepper.

    Divide the risotto over four plates and garnish with extra grated cheese and some fresh parsley.
